Slow Cooker Beef Stew

This Slow Cooker Beef Stew is a classic beef stew recipe, with a couple extra twists, such as apple cider (or juice) and steak sauce, making it unique, tender, and flavorful.  It's one of those awesome "prep it and forget it" meals that you can throw together in 20 minutes, and it'll be ready by dinner- my favorite kind.

This recipe is also freezer-friendly.  Instead of prepping it in your slow cooker, just mix it in a large bowl and put it in a freezer-safe container until you're ready to use it.  When you want to eat it, thaw the night before and dump it in your slow cooker in the morning, with the same cook time.

Ingredients

  • 2 pounds stew beef cut into 1 inch cubes
  • 2 tablespoons butter
  • ¼ cup flour
  • 2 cups water
  • 1 cup apple cider or apple juice
  • ½ cup steak sauce
  • ¼ teaspoon ground thyme
  • 4 medium potatoes peeled and cubed
  • 3 medium carrots chopped
  • 1 medium onion chopped
  • 1 cup frozen cut green beans
  • salt and pepper to taste

Instructions

  • In a large skillet, melt butter over medium-high heat. Add beef and brown the outside. It does not need to be cooked through- just browned on the outside to keep it juicy in the slow cooker.
  • Add the flour. Stir to incorporate, and set aside.
  • In your slow cooker, mix together water, cider, steak sauce, thyme, and a pinch of salt and pepper.
  • Add potatoes and vegetables and stir to combine.
  • Add beef and stir again. Allow to cook on low in the slow cooker for 6-8 hours, until vegetables are tender and beef is cooked through. Add salt and pepper to taste before serving.
