Surprise Inside Waffle Cone Carrots - Easter Treat

I've been wracking my brain trying to think of a really fun Easter treat for the kiddos. Honestly, I'm not the most creative person, so this stuff is hard for me! I was a math major in college, and am very much a left-brained person.  But I remembered seeing these adorable waffle cone witch hat treats during Halloween-time, and I just thought, that would be so cute if I could turn those into Easter carrots!

So I did! These adorable Easter carrots are made from waffle cones, cookies, orange candy melts, jelly beans, and edible grass.  I was kind of worried about dipping the whole waffle cone into the chocolate, but it turned out great! And it really was so much easier than I was expecting.  I must admit I'm pretty pleased with my left-brained self!

What you'll need to Make Surprise Inside Waffle Cone Carrots:

  • 6-8 Waffle Cones
  • Cookies that are big enough to fully cover the open end of the cone (I used mini waffle cones, so creme sandwich cookies fit perfectly)
  • Orange Candy Melts OR white chocolate chips and orange Chocolate Dye (MUST be chocolate coloring, as regular food coloring doesn't absorb well into chocolate)
  • Jelly Beans
  • Edible Grass
  • Baking sheet covered in wax paper or foil

Directions for Surprise-Inside Waffle Cone Carrots

1.  In a microwave-safe bowl, melt about half of your chocolate in the microwave in 30 second intervals, stirring after each interval.  Don't microwave too long or your chocolate will begin to harden again and burn.

2. When the chocolate is fully melted, dip each waffle cone into the chocolate and cover completely.  Try not to fill the inside of the carrot, as that's where the jelly beans will go. Place, open side down, on your covered baking sheet for the chocolate to set.  If you have spots that didn't get covered in chocolate or the chocolate dripped off, you can touch it up with your finger or a pastry brush. You can also place the baking sheet with the cones in the refrigerator for a faster set time.

3.  Repeat steps 1 and 2 with half of the remaining chocolate, this time dipping your cookies, but don't place these in the refrigerator yet!

4.  Keep the dipped cookies out, and cut 6-8 small bunches of edible grass. Dip one end of the grass into the chocolate, and stick onto the middle of the dipped cookies.  Your cookies will need to be a little set for the grass to stay put, but not totally hardened.  Once you have the edible grass in place, you can pop your cookies into the refrigerator too.

5.  Once the chocolate on the cones and the cookies is fully set, you can start putting all the pieces together. Melt the remaining chocolate using the same method as directed in step 1.

6.  Grab a cone and fill with jelly beans.

7. Using your finger, a spoon, or a pastry brush, spread a generous amount of chocolate around the edge of the open side of the cone.  Place a cookie on top, grass side facing out (some chocolate ooze is okay for now!) Then I popped mine immediately back in the fridge to set quickly.  You can just lay the carrot on its side.  We'll do some clean-up and touch-ups at the end. Repeat for each carrot. Then wait 10-20 minutes for the chocolate to set again.

8. When the chocolate is set, you can remove your carrots from the refrigerator. If you have any spots without chocolate, you can touch it up using the remaining chocolate and a pastry brush.  If you have big bumps on your carrots from where the cone and cookie meet, it can easily be smoothed out using a potato peeler.  Just skim the peeler along the bump until you're happy with the look, but be careful not to take off too much and expose the cone or cookie.

Ta-da! That's it! Now you have an adorable Easter treat for the kiddos! The wait time is the longest part!
