But one thing that's never bitter (and always sweet) is that end-of-summer super juicy, super sweet, fresh sweet corn. Which makes it the perfect time to whip up a batch of these Air Fryer Corn Fritters!

What Kind of Corn Should I Use?
Sweet corn is preferred. Fresh is great. Simply cut it off the cob. But in a pinch, or if it's not corn season, canned or frozen (thawed first) will work just fine!

Air Fryer Corn Fritters
Ingredients
- 2 cups corn (about 4 ears with the kernels removed)
- ½ cup cornmeal
- ½ cup flour
- ½ cup shredded cheddar
- 1 jalapeno seeded and finely chopped
- ¼ cup fresh chives
- ½ cup milk
- 2 large eggs
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Add all fritter ingredients except frying oil to a large mixing bowl. Stir to combine.
- Spoon about 2 tablespoons fritter mixture to form each fritter in the basket of your air fryer. Flatten the batter a bit as necessary. Cook in batches of about 3 to 4, depending on the size of your air fryer.
- Cook in air fryer at 370°F for 10 minutes. Serve when cooked through and crispy on the outside.
- Serve warm with a dollop of sour cream and chives for garnish.
Notes
- Use a cookie scoop to scoop fritter batter for uniform size fritters.
- Salt your fritters just after they cook while they're still warm.
- Storage: Store in an airtight container in the refrigerator for up to one week. To reheat, cook in the air fryer at 370°F for about 2-4 minutes or until heated through and crispy on the outside.
- Freezer Directions: Lay cooked air fryer zucchini fritters flat in a single layer on a lined baking sheet. Place in the freezer for an hour or 2. Transfer fritters to a large freezer bag. Freeze for up to 3 months. Thaw overnight in the refrigerator before following the reheating above.
