Ingredients

  • 1 medium acorn squash
  • 1 tablespoon olive oil
  • Salt and pepper to taste if desired

Instructions

  • Cut the squash in half vertically. Use a large spoon to scoop out the seeds and discard them.
  • Prick all over the insides of the squash halves with a fork.
  • Place squash halves, cut sides-up, into a large, microwave-safe dish.
  • Brush with olive oil and season with salt and pepper if desired.
  • Microwave on high power until flesh pierces easily with a fork, about 10 to 15 minutes. Season with salt and pepper.
