Oh, man. I am really stressing about back to school this year. All three of our kiddos are going to school this year, adding an extra element of chaos to our already busy schedules. Honestly the worst part of the school day for me is mornings. So I do have a few morning hacks, like the grab-and-go milk and cereal bars made with Annie's Cocoa Bunnies Cereal that I'm sharing my recipe for today! (More about those in a minute!)
My kids also love Annie's Cocoa Bunnies Cereal in a bowl with milk, along with the Berry Bunnies flavor too. And I feel good giving it to them because it's made with organic ingredients and fair trade cocoa. Plus, bunnies! The cereal is so adorable. Quick and easy breakfast that my kids and I can all agree on.

So. Back to these homemade milk and cereal bars. These bars are seriously amazing. Not only are they a life saver on particularly busy mornings when I don't have enough time to sit down for breakfast, but my kids LOVE them. AND they're super easy to make. The hardest part is waiting for it to set!
Homemade Milk and Cereal Bars are also really awesome because they're totally customizable and you can switch them up every batch or consistently use your favorite combo. For the batch pictured, I used Annie's Cocoa Bunnies, chocolate hazelnut butter, and a handful or dried mixed berries. But the possibilities are endless! Cocoa Bunnies and peanut butter, Berry Bunnies and almond butter,... Mmmm. So good. You can omit the ground flaxseed from the recipe if you're in a pinch and don't have any, but your bars will be slightly gooey-er. To fix this, you can leave them out for an additional 24 hours to let the honey harden and do its magic.

So without further ado, let's whip up this homemade Milk and Cereal Bars recipe!
Milk and Cereal Bars Recipe
Milk and Cereal Bars
Ingredients
- 2 ½ cups Annie's Cocoa Bunnies or Berry Bunnies Cereal divided
- 2 cups oatmeal
- 1 cup ground flaxseed
- ½ cup nut butter peanut, almond, or hazelnut is what I usually use
- ½ cup honey
- OPTIONAL ½ cup dried fruit
- 1 ½ teaspoons vanilla
- ¼ teaspoon salt
For the milk coating
- ¼ cup Greek yogurt
- 2 cups powdered sugar
- 1 teaspoon vanilla
Instructions
- In a large mixing bowl, combine 2 cups cereal, oatmeal, flaxseed, dried fruit, and salt. Stir to combine. Set aside.
- In a small microwave-safe mixing bowl, add nut butter and honey. Microwave for about 30 seconds to soften. Stir until combined and smooth. Add vanilla, and stir again until combined.
- Pour honey mixture into cereal mixture. Stir until all ingredients are combined.
- Line a 9"x9" baking dish with wax paper, and pour cereal mixture into dish. Press down evenly in the dish. Place a second piece of wax paper on top to press down evenly. Freeze for 2 hours.
- To make the milk coating: Combine yogurt and powdered sugar in a small mixing bowl. Whisk together until smooth. Add vanilla and whisk again.
- When cereal bars are frozen, cut into bars.
- Spread yogurt mixture onto each bar. Sprinkle bars with remaining ½ cup cereal.
- Allow bars to dry overnight.
