If you have kids, then you know what picky eaters they can be sometimes. Especially at a restaurant or on vacation. I remember thinking on our last vacation that I was pretty sure the kids ate chicken nuggets everywhere they went since we left!
Needless to say, I am SO excited to partner with Omni Hotels & Resorts to share their new Omni Originals Culinary Kids series.
My family and I had the opportunity to visit the Omni Chicago Hotel location and taste some of the food from this series. PLUS, my kids and I got to make one of the recipes ourselves to try at home! And let me tell you, it was so fun and so delicious! Anything but your typical "kids menu."
Tell me more about Culinary Kids!
Culinary Kids is an Omni Originals culinary series that is available starting this April, only at Omni Hotels and Resorts. It's especially designed for kids (under 12) to experience bold and unique flavors in a way that they'll love.
It is kids' food, next-level! Bold flavors, bright colors, and fun dishes. Culinary Kids also features lots of dipping and finger foods, which are always wins in my house!
There are also Omni Originals series for grown-ups if you're interested! These series are featured in properties across the country and feature food and beverages with a theme, such as Omni Minis or Cookie Cocktails.

Our Trip to the Omni Chicago Hotel
Omni Hotels & Resorts has locations all over the U.S., as well as some in Canada and Mexico. Their properties are beautiful. What I love most about them is that they're totally kid friendly and perfect for family vacations, but they also make a great romantic get-away for just mom and dad (assuming you can convince the grandparents to babysit... ๐ ).
Last weekend, we were lucky enough to be able to stay at the Omni Chicago Hotel, which is right on the Mag Mile. It's also a stone's throw from Navy Pier (20 minute walk), where we got engaged! โค
Our room was beautiful and so was the view! We could see the John Hancock building right from our suite. So cool. The kids received a Kids Crew backpack with fun activities and even got milk and cookies delivered to the room for the first night!
The hotel also features 676 Restaurant, which was names of the Top Ten Hotel Bars in Chicago. You can also order the Culinary Kids menu items OR have them sent up to your room.
Since I felt like staying in jammies, we ordered breakfast up to our room. The kids opted for the Banana Skewers, which are bananas covered in yogurt and rainbow cereal, and Rainbow Acai Bowl.
Unfortunately for me, they devoured the banana skewers before I could take the picture for you guys! I did get one of the rainbow acai bowl while they were busy eating the skewers though!
My kids LOVED both of these dishes, and I loved that my kids were trying something new, without complaint. And THAT'S really the genius the Culinary Kids menu.
Pancake Parfait Tacos
When we got home, the kids and I were still excited about the fun food they had at the hotel. We were lucky enough to be able to make another of the recipes from Culinary Kids at home! I don't know which they loved more: making it or eating it!
The recipe my kiddos really wanted to make was pancake parfait tacos. They were so excited to be able to make pancakes into tacos for breakfast!
Our pancake parfait tacos turned out amazing. Fluffy pancakes, creamy yogurt, fresh apples and strawberries, crunchy granola, and a little drizzle of sweet honey. It was perfection. Even the hubby got in on the action!
How to Make Pancake Parfait Tacos
Step 1: Prepare pancake batter.
Step 2: Using a 3 ounce ladle, scoop 3 portions of pancake mix onto a griddle or large skillet over medium heat so that the diameter is roughly 4 ยฝ inches. (A 3 ounce ladle, is about โ cup, so you can use that instead!)
Step 3: Cook pancakes until brown on both sides, and there is no more raw batter in the middle.
Step 4: Using a taco stand, place the pancake 'shells' in the holders and add the vanilla yogurt, top with apple, strawberry, and granola.
Step 5: Drizzle the top with honey.
Serve with breakfast potatoes, and enjoy!
Pro Tips
- This recipe is for ONE serving. Each plate comes with three tacos. The batter recipe will make about 3-4 pancakes. You can adjust the amount of tacos you want to make by clicking on the number next to "Servings" in the recipe card.
- I will include the recipe I used to make the pancake batter in the recipe below, but feel free to use your favorite pancake recipe or even a box mix to make life easier.
- When it's time to flip the pancakes, the raw batter part on top will have bubbles, and the bottom will be golden and set. Then cook until the pancake is cooked through.
- For an easy breakfast to put together in the morning, cook the pancakes the night before and place in a baggy in the refrigerator. You can also prep the fruit the night before. Just place it in a bowl after cutting, and toss it with juice from half a lemon to keep it from browning overnight.
Pancake Parfait Tacos
Ingredients
Pancake Batter
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- โ teaspoon salt (a pinch)
- 1 egg
- ยพ cup milk
- 1 tablespoon butter (melted)
- ยฝ teaspoon vanilla extract
Pancake Parfait Tacos
- 3 ounces vanilla yogurt (about 2 tablespoons per taco)
- 1.5 ounces granola (about 1 tablespoon per taco)
- 2 large strawberries, sliced
- ยผ granny smith apple, julienned
- 1 tablespoon honey
Instructions
- Prepare pancake batter. Add dry ingredients to a large mixing bowl. Whisk together. Make a well in the center. Add all wet ingredients to the mixing bowl. Whisk until just combined.
- Using a 3 ounce ladle or โ cup measuring cup, scoop 3 portions of pancake mix onto a griddle or large skillet over medium heat so that the diameter is roughly 4 ยฝ inches.
- Cook pancakes until brown on both sides, and there is no more raw batter in the middle.
- Using a taco stand, place the pancake 'shells' in the holders and add the vanilla yogurt, top with apple, strawberry, and granola.
