Texas Sheet Cake Cookies

Soft, fudgy, and topped with a rich, glossy chocolate icing, these Texas Sheet Cake Cookies have all the classic flavor of the beloved Southern dessert in a perfectly portable cookie form!

Texas Sheet Cake is my kids' favorite cake that they ask for their birthday every year, so you better believe these cookies were tested until they were just as much a favorite!

Made completely from scratch with melted chocolate in the dough and that signature decadent warm cocoa frosting poured right on top, they’re every bit as irresistible as the original cake.

Why You’ll Love These Texas Sheet Cake Cookies

If you love the deep, buttery chocolate flavor of a traditional Texas Sheet Cake, you’ll fall hard for these cookies.

  • Fudgy texture: Soft and dense inside, with rich chocolate flavor throughout.
  • That classic icing: Warm, pourable chocolate frosting that sets into a crackly, shiny layer. I thickened it just a little bit so that the frosting wouldn't just run right off the cookie and the maximum amount would just stay right on!
  • Easy to make: No mixer required for the frosting, and the dough comes together quickly.
  • Perfect for sharing: Ideal for parties, holidays, or gifting—no slicing needed!

They’re the ultimate mash-up of your favorite decadent simple cake and a cookie, topped with that nostalgic Southern-style icing everyone loves.

Variations

  • With nuts: Sprinkle finely chopped pecans or walnuts over the freshly poured, still-wet frosting.
  • Mocha twist: Mix in 1 teaspoon instant espresso powder with the cocoa intensify the chocolate flavor and a subtle coffee note.
  • Mini version: Use a small cookie scoop for bite-size versions that are perfect for parties or gifting.

More Decadent Cookie Recipes You'll Love

  • Peanut Butter Chip Chocolate Cookies - Soft, chewy chocolate cookies packed with creamy peanut butter chips for the ultimate sweet-and-salty combo.
  • Oatmeal Scotchies - Classic chewy oatmeal cookies loaded with butterscotch chips for a warm, buttery flavor in every bite.
  • Chocolate Crinkle Cookies - Fudgy chocolate cookies coated in powdered sugar that crackle as they bake for a festive, brownie-like treat.
  • Brookies - The best of both worlds! Rich, fudgy brownies meet soft, gooey chocolate chip cookies in one irresistible bar.
  • Peanut Butter Blossoms - Classic peanut butter cookies topped with a chocolate kiss for a timeless, crowd-pleasing favorite.

Ingredients

Chocolate Cookies

  • ½ cup unsalted butter room temperature
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1⅓ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips

Frosting

  • ½ cup butter
  • ⅓ cup milk
  • ¼ cup cocoa powder
  • 3½ cups powdered sugar (about 1 pound)
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350°F. Line baking sheet with parchment paper or silicone mat. Set aside.
  • In a large mixing bowl, cream together butter and sugar together until light and fluffy.
  • Add in egg and vanilla and continue mixing until incorporated.
  • Add baking powder and salt. Then turn mixer to low and slowly add in flour. Dough will be thick.
  • In a microwave safe bowl heat chocolate chips on high in 30 second increments until melted, stirring after every 30 seconds.
  • Mix melted chocolate directly into cookie dough until evenly mixed.
  • Drop dough by a measured tablespoon sized mounds onto baking sheet.
  • Bake for 7-8 minutes until cookies just appear set. They will still be very soft on the inside. Make sure not to overbake these cookies. The insides will remain soft and dense if baked correctly.
  • Allow cookies to set on baking sheet for 5 minutes before transferring to a cooling rack.

Frosting

  • Melt butter in a medium saucepan over medium heat.
  • Stir in milk and cocoa powder.
  • Bring to a boil, stirring constantly.
  • Whisk in powdered sugar and vanilla until smooth.
  • Pour icing over cookies and allow icing to set before serving.

Notes

  • Storage: Store baked cookies covered at room temperature for up to a week.
  • Freezer Instructions: Baked cookies can be stored in a freezer bag in the freezer for up to 3 months.
