Crock Pot Root Beer Pulled Beef

This Crock Pot Root Beer Pulled Beef recipe that I'm sharing today is a little different than the others you might see floating around Pinterest.  I found the original recipe and I immediately decided I needed to try it. So it went on my must-try list.  But when I finally did try it, I wasn't as in love with it as I thought I would be.  I mean beef, root beer, and barbecue sauce. What's not to love?! But it just tasted like it was missing something!

So being the stubborn girl that I am, I started playing with the recipe a little bit because I just knew that this Crock Pot Root Beer Pulled could be amazing. Should be amazing. What I discovered is that there was too much sweetness (with sweet root beer and sweet barbecue sauce), and not quite enough tang.  So I added just a little bit of apple cider vinegar and a splash of hot sauce, and that gave the recipe just the right amount of tang and a dash of spice.  Perfect!

What's even better than the perfect ratio of tang and sweet in this Crock Pot Root Beer Pulled Beef recipe is that it's one of those throw-it-all-in-the-Crock-pot-and-don't-worry-about-it-until-dinner recipes.  You know. The best kind.  So to make your own Crock Pot Root Beer Pulled Beef, place your beef roast in the slow cooker, and season it liberally with salt and pepper.  Pour in the remaining ingredients (there's only 4 more!), and give it a little stir, if you'd like. Let it cook on low for about 8 hours before you shred it.  Serve your Crock Pot Root Beer Pulled Beef on buns with your favorite sides.  I love serving it with some creamy coleslaw for some cool, fresh crunch!

Ingredients

  • 1 3.5 pound beef roast
  • 1 cup root beer
  • 1 18 ounce bottle barbecue sauce
  • ¼ cup apple cider vinegar
  • 1 tablespoon hot sauce
  • Salt and pepper to taste
  • Hamburger buns for serving

Instructions

  • Add all ingredients to the slow cooker. Stir to combine.
  • Cook on Low for about 8 hours, until roast is cooked through.
  • Remove roast from slow cooker. Shred. Then return to the slow cooker, stirring to combine.
  • Serve warm on buns with coleslaw for an extra crunchy, tasty kick.
