Pineapple Salsa
- 1ยฝ cups fresh diced pineapple
- 2 Roma tomatoes diced
- 1 fresh jalapeno seeded and finely chopped
- 1 garlic clove minced
- โ cup fresh cilantro
- ยผ cup diced red onion
- 2 tablespoons fresh lime juice
- ยผ teaspoon salt plus more to taste
Slaw
- ยผ cup olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon horseradish
- 1 teaspoon lemon juice
- ยผ teaspoon salt (or to taste)
- ยผ teaspoon black pepper
- 4 cups finely shredded red cabbage (or coleslaw mix)
- 1 green apple grated
- ยผ cup fresh parsley finely chopped
BBQ Salmon
- 1 tablespoon olive oil
- 4 skin-on salmon fillets
- 1 tablespoon brown sugar
