Peas with Feta and Bacon
My oldest is kind of a weird eater (and that's coming from a weird eater, myself. I guess that would make him a super weird eater...). Atypical kiddo eating, but in a totally awesome-for-mom way. For instance, if you ask him what his favorite food is he won't answer with your typical childhood favorites like mac and cheese, chicken nuggets, or grilled cheese. He'll instead tell you that he loves broccoli and peas. I told you. Totally weird.
Now, I actually don't even like peas, so imagine my dismay when he went through his typical toddler picky eating only instead of only wanting macaroni, he only wanted peas! During this time, I tried mixing things up with different recipes. Some were... not so good (Pea omelet?... I don't recommend it.) Others were much more tasty, like this simple, quick and easy Feta Bacon Peas recipe.
Peas cooked with bacon to add that much loved salty bacon flavor with a little extra crunch, then mixed with creamy Feta cheese to add a creamy tangy flavor. So yummy! Definitely a winner amongst flops. (But if you asked my oldest, he'd still say he likes peas plain the best. See? Weird.)
Feta Bacon Peas Recipe
Feta Bacon Peas
Ingredients
- 4 slices thick cut bacon cooked and crumbled
- 1 16 ounce bag frozen peas
- 1 tablespoon butter
- 4 ounces Feta crumbled
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add bacon and peas and stir to combine.
- Continue cooking until peas are cooked through, about 10-15 minutes.
- Remove from heat and place in a serving dish. Add salt and pepper to taste.
- Sprinkle feta cheese on top before serving.
