Garlic Chive Baked French Fries

I try to add something a little starchy to dinner every night, just to round out the meal, but sometimes starchy foods can be a bit too heavy for Summer.  My solution to this is baked french fries.  Baking french fries is easy, they're not too heavy, and they're easy to spice up, like with this Garlic Chive Baked French Fries Recipe with butter and fresh garlic and chives to make a classic favorite into a fresh new zesty side dish.

Making french fries from scratch is pretty easy, but I like this oven baked french fries recipe because if I'm in a real time crunch, I can sub out the fresh potato strips for frozen french fries. Pretty great, right?!

Ingredients

  • 4 medium russet potatoes cut into ¼-inch strips
  • 1 tablespoon olive oil
  • 2 tablespoons butter melted
  • ¼ cup fresh minced chives
  • 4-5 garlic cloves minced
  • 2 tablespoons grated Parmesan
  • Salt and pepper to taste
Prevent your screen from going dark

Instructions

  • Spread out potato strips on a large baking sheet. Set aside.
  • In a small bowl, combine oil, butter, chives, garlic, and Parmesan.
  • Pour butter mixture over potato strips and toss to full coat.
  • Season liberally with salt and pepper
  • Bake at 450° for 20-25 minutes.
  • Add more salt and pepper to your tastes and serve warm.
