Buttery Smashed Potatoes Recipe

I came across this recipe last year on Yummly (a really awesome foodie site with tons of recipes) called Crash Hot Potatoes.  It's basically boiled potatoes that are then mashed slightly and coated in olive oil, salt and pepper, then baked to crispy perfection.  Turns out the recipe was actually from The Pioneer Woman, so I should have known it would be amazing!

But I made a very important tweak to these delicious crispy smashed potatoes, and that is BUTTER! Everything is better with butter (or bacon!) and these Buttery Smashed Potatoes are no exception!

Buttery Smashed Potatoes Recipe

Buttery Smashed Potatoes are a super easy potato side dish recipe. Boiled potatoes, smashed, smothered in butter, and baked until crispy.

Ingredients

  • 12 baby potatoes
  • 4 tablespoons or more! butter, melted
  • salt and pepper to taste

Instructions

  • Bring a large pot of lightly salted water to a boil. Add as many potatoes as you'd like (I usually make 2 per person). Boil potatoes until tender enough to easily poke with a fork, about 10-15 minutes.
  • Drain potatoes from water, and spread out on a large greased baking sheet. (You may need more than one baking sheet. I can usually only fit about 8 potatoes on one baking sheet.)
  • With a potato masher, gently push down on one of the potatoes. Lift up, remove anything that sticks. Rotate the potato masher 90-degrees, then gently mash again. Repeat this process for each potato.
  • Melt your butter in a microwaveable bowl. With a pastry brush, spread butter generously onto each potato.
  • Sprinkle each potato with salt and pepper to taste. What are crispy potatoes without lots of salt?! Be generous here!
  • Bake in a 400° oven for about 20 minutes, or until edges are browned.
  • Sprinkle with additional salt, if you found you weren't generous enough before. Serve warm, while the butter is still melty!
