Happy New Year! I love the beginning of each new year when everything feels fresh and shiny and new and the world of possibilities for the next year seems endless. It's the perfect time to imagine things better. Better organization, better cleaning, better schedule, better food, better body, better person. Unfortunately, it's all too easy to let all of those endless possibilities and dreams of better get lost and forgotten come the second week of January.
I'll probably let most of my resolutions slide by the end of the month (I'm just trying to be honest with myself!), but I know I won't be letting go of making sure my family has healthy, better meals because it can be so simple! As a work-at-home mom of 3 and firefighter wife, time is my most precious commodity. I hate wasted time, and I really don't have any to spare, especially on shift days when I'm doing it all, all on my own. It's so tempting sometimes to just phone it in and order a pizza or go through a drive-thru. But there's a healthier, better option. And it doesn't take any more time than waiting for the pizza guy or going through the drive-thru, and there's way less after-guilt involved.
Choose frozen foods. Frozen foods are healthy, fast, and easy to make, perfect for time-strapped moms and families looking for family-friendly, kid-friendly healthy dinners. So when I'm out doing my bi-monthly grocery shopping at Kroger, I make sure to grab some simple frozen items that I know I can put together easily when I won't have much time and might be tempted to go the less healthy route.
I love grabbing packages of pre-cooked frozen chicken and serving it with some steamed veggies (the kind that you can steam in a bag in the microwave, mind you.) There's just so many options and flavor combinations at Kroger. Meats, veggies, single dinners for meals on-the-go, pre-made family dinners, even frozen pizza (which is a lot easier on the wallet than delivery too!)
To start you off (and, okay, me too) on a healthier, easier, and better year, today I'm sharing this Southwest Chicken Wraps recipe. It's healthy, packed with flavor, easy, and comes together in less than 30 minutes. Made with Tyson Grilled and Ready Applewood Smoked Chicken Breast Strips and Birds Eye SteamFresh Southwest Style Protein Blends, there's ton of healthy flavor that's just ridiculously simple to whip up! Southwest Chicken Wraps Recipe
Southwest Chicken Wraps
Ingredients
- 1 (22 ounce package Tyson Grilled and Ready Applewood Smoked Chicken Breast Strips
- 2 12.7 ounce package Birds Eye SteamFresh Southwest Style Protein Blends
- Optional: ยฝ tablespoon taco seasoning OR ยฝ teaspoon chili powder, ยฝ teaspoon cumin, ยผ teaspoon garlic powder, ยผ teaspoon onion powder, and salt and pepper to taste
- 8-10 cups lettuce
- Additional Toppings such as avocado pico de gallo, sour cream, onions or shredded cheese
For the Creamy Avocado Cilantro Lime Sauce
- 1 cup sour cream
- 1 ripe avocado peeled and pitted
- โ cup jarred jalapeno slices
- โ cup cilantro leaves
- Juice from ยฝ lime
- 1 garlic clove
- 1 teaspoon cumin
- Salt to taste
Instructions
- Prepare Birds Eye SteamFresh Southwest Style Protein Blends in the microwave, according to package instructions.
- While steaming the Southwest blend, place frozen chicken breast strips in a large skillet over medium heat. Cover and cook until chicken is heated through.
- While chicken is cooking, add all of the Creamy Avocado Cilantro Lime Sauce ingredients to a food processor and blend until smooth. Add salt to taste. Place in a serving bowl and refrigerate until ready to use.
- When chicken is heated through, add cooked Southwest style Protein blends to the skillet and stir to combine.
- Add taco seasoning (or substitute seasonings) and salt and pepper to taste. Stir to combine. Remove from heat.
To assemble
- Place a large wrap tortilla on a plate, add 1 cup of lettuce. Spoon chicken mixture on top. Add your favorite toppings. Drizzle with the Creamy Avocado Cilantro Lime sauce.
- Enjoy!
