Gingerbread Waffles

Warm spiced Gingerbread Waffles are crispy on the outside and fluffy on the inside and topped with a simple vanilla glaze. You can basically have a classic holiday cookie for breakfast! They're easy to make, freeze, and make ahead, making them ideal for both busy weekdays and chaotic holiday mornings!

They're the perfect festive holiday breakfast and will leave your kitchen smelling like a winter wonderland.

How Many Waffles Does This Recipe Make?

The answer will vary greatly depending on your waffle maker. This recipe will make about twelve 4-inch square waffles. You may make more or less waffles depending on the size and shape of your waffle iron. I love my large waffle iron that makes four waffles at once.

Variations & Tips

  • Eggs - To get these waffles cooking a bit faster, you don't have to separate the egg yolks and whites. You can just put the whole egg in when the recipe says yolks. Your waffles will be a tad less fluffy with this method.
  • Buttermilk - If you don't have buttermilk on hand, you can use this easy buttermilk substitution with just milk and vinegar. Alternately, you can use 1 cup plain yogurt and 1 cup milk, whisked together.
  • Waffles Sticking - If your waffles are sticking to the iron, it likely hasn't cooked long enough to release. If your waffles are sticking and burning, I recommend splashing the iron with some olive oil, and gently wiping with a pastry brush to spread evenly. I don't recommend spray oils as they can ruin the iron.

Gingerbread Waffles Toppings Ideas

The recipe below includes how to make a simple vanilla glaze that's just like your favorite gingerbread cookies and can be used like a syrup. But here are some other serving options if you want to mix it up!

Ingredients

  • 2 cups all-purpose flour
  • ⅓ cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon salt
  • 4 large eggs
  • 2 cups buttermilk
  • ½ cup coffee cooled to room temperature
  • ⅓ cup molasses
  • 4 tablespoons butter melted
  • 1 teaspoon finely grated fresh ginger

Powdered Sugar Glaze

  • 2 cups powdered sugar
  • 2 tablespoons butter melted
  • ½ teaspoon vanilla
  • 3 to 4 tablespoons milk

Instructions

  • Preheat waffle maker on medium-high heat. Preheat oven to 200°F. Place a wire rack on a baking sheet; set aside.
  • In a large mixing bowl, whisk together flour, brown sugar, baking powder, baking soda, ground ginger, cinnamon, allspice, and salt.
  • To the dry ingredients, add eggs, buttermilk, coffee, molasses, butter, and ginger, and whisk until just combined.
  • Pour about ⅓ cup of the batter into each well of the waffle maker (or less if your waffle maker is smaller) and close the lid. Cook the waffles until crisp, about 4–5 minutes. (Follow the cooking instructions for your waffle maker.)
  • Transfer the cooked waffles to the wire rack/baking sheet and keep warm in the preheated oven as you cook the rest. Repeat to cook the remaining batter.

For the Glaze

  • In a large mixing bowl, whisk together all glaze ingredients. Drizzle over waffles when serving.

Notes

  • Storage: Store leftover waffles covered in the refrigerator for up to 5 days. Reheat in the microwave or toaster.
  • Make Ahead: Prepare waffles to recipe instructions. Allow to cool to room temperature. Transfer to a freezer bag and freeze for up to 3 months.

Reheat by toasting in the toaster until warmed through. For a lighter toast, you can microwave waffle for about 10 to 30 seconds, and then finish it in the toaster to crisp up the outside.
