Ingredients
Cilantro Lime Slaw
- 14 ounces coleslaw mix
- 1 apple shredded
- ½ cup sliced green onions
- ½ cup chopped cilantro leaves
- Juice from 2 limes (about 2 tablespoons)
- ¼ teaspoon garlic powder
- ½ cup full fat Greek yogurt
- ¼ cup olive oil
- Salt and pepper to taste
For the Shrimp Tacos
- 1 pound shrimp peeled and deveined
- 1½ teaspoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon chile lime seasoning (tajin)
- ¼ teaspoon cayenne (optional)
- ¼ teaspoon salt plus more to taste
- ¼ teaspoon black pepper
- Tortillas for serving, corn or flour
- Toppings such as avocado, cotija cheese, or pico de gallo
Instructions
- In a large bowl, add all coleslaw ingredients. Stir to fully combine and coat the coleslaw with sauce. Cover and refrigerate until ready to serve.
- In a separate large bowl, add shrimp and toss with olive oil.
