Salisbury steak is an American comfort food dish that's made with ground beef, bread crumbs, and seasonings and simmered in a savory mushroom and onion gravy, in this case in the instant pot.
What Kind of Meat is Instant Pot Salisbury Steak Made of?
Salisbury steak is made from ground beef, so it's not really even a steak at all! A slightly leaner, such as 80/20, ground beef is preferred so that there's not too much fat in the gravy.
What's the Difference Between Salisbury Steak and Hamburger Steak?
Though the two are similar, especially in looks, there are some differences between Salisbury and hamburger steaks. Hamburger steaks are usually simpler. They contain ground beef, salt, and pepper, whereas the Salisbury steaks also contain egg, breadcrumbs, and additional flavors and seasonings.
Why Don't You Use the Saute Function on the Instant Pot?
I personally do not care for this particular function. The temperature is never quite right and everything sticks to it. Since I wanted the patties to stay in the proper shape, I really wanted to prevent sticking.
If you love the saute function on your instant pot, you are more than welcome to use it. I think it's easier to sear it on the stove before transferring it over.
Do I Need to Use the Wine?
No, you don't. However, it adds so much richness and depth to the flavor, so I highly recommend it.
Recipe Variations
- Gluten Free - Use gluten free bread crumbs and gluten free worcestershire or tamari to make this recipe gluten free.
- Ground Beef - Ground turkey, pork, or any ground meat will work for this recipe. Obviously, depending on the meat, the flavor will differ from ground beef.
- Wine - You can substitute more water or broth instead of wine. But I highly recommend using it because it really elevates the flavor.
- Mushrooms - You can leave out the mushrooms if you're not a fan.
- Meatballs - Instead of patties, you can shape your meat into meatballs. The cook time may vary slightly depending on the size of your meatballs.

Salisbury steak is typically served with mashed potatoes to soak up and complement the most amazing caramelized onion gravy that it's cooked in. I like to add a vegetable as well, such as steamed broccoli or green beans.

Instant Pot Salisbury Steak
Ingredients
- 2 pounds ground beef
- 1 large egg
- โ cup bread crumbs
- ยผ cup grated onion
- 1 tablespoon dried parsley
- 2 teaspoons garlic powder
- ยฝ teaspoon onion powder
- 1 teaspoon salt
- ยฝ teaspoon black pepper
- โ teaspoon ground thyme
- 3 tablespoons olive oil
- 1 large onion thinly sliced
- 8 ounces sliced white mushrooms
Gravy
- 2 cups water
- โ cup red wine
- โ cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon beef base
- 2 garlic cloves minced
- 4 tablespoons corn starch
- ยผ cup cold water
Instructions
- In a large mixing bowl, add ground beef, egg, bread crumbs, grated onion, garlic powder, onion powder, salt, pepper, and thyme. Mix together until combined.
- Form 8 patties, and set aside on a plate.
- Heat olive oil in a large skillet over medium-high heat. When skillet is hot, quickly sear the outside of the patties, 2 or 3 at a time. (Don't cook them all the way through.) Remove from skillet and transfer to bottom of Instant Pot.
- When all patties have been browned, add onions and mushrooms to the skillet. Saute until onions are tender, about 3-5 minutes. Pour onion mixture on top of patties in Instant Pot.
- In a medium mixing bowl, add all gravy ingredients except corn starch and 4 tablespoons water. Whisk together. Pour over patties in the Instant Pot.
- Close the lid of the Instant Pot and set the steam release knob to the Sealing position. Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 7 minutes on High Pressure. The pot will take several minutes to come to pressure.
- When the cook cycle has finished, turn off the pot and let it sit undisturbed for 10 minutes (10 minute natural release). Then turn the steam release knob to the Venting position to release the remaining steam/pressure. When the pin in the lid drops back down, open the lid.
- Remove patties to a plate and set aside.
- In a small mixing bowl add cornstarch and water and whisk to combine. Pour into gravy mixture in Instant Pot and whisk to incorporate. The onions will also break down while you whisk which will help thicken the gravy as well.
- Serve salisbury steak smothered in plenty of gravy!
Notes
- Beef Base - You can also use beef broth instead of water. I use the Better than Bouillon brand.
- Mandoline - For best results, use a mandoline slicer to slice the onions super thin. This will ensure that they caramelize properly into the gravy.
- Storage: Store leftovers covered in the refrigerator for up to 5 days. Reheat individual servings in the microwave.
- Freezer Directions:ย Freeze uncooked patties flat on a baking sheet, then transfer to a freezer container for up to a month. Follow remaining recipe instructions and add patties when ready to use.
