These simple Instant Pot Chicken Fajitas are a quick and easy weeknight meal that you will want to make on repeat. Juicy seasoned chicken with peppers and onions are all cooked together in the pressure for easy cooking and easy clean-up!
While they're not exactly the same as the char-grilled fajitas at your favorite Mexican restaurant, they do embody the same zesty flavors. And they're much cheaper to make at home.

Do I Have to Marinate?
Marinating makes the chicken more tender and flavorful, so I recommend it. However, if you're in a time crunch, you can skip marinating. Simply toss the chicken in the marinade ingredients and continue with the recipe.
Homemade Fajita Seasoning
Homemade fajita seasoning is super easy to make, and so much healthier and tastier than store bought. I usually make a big batch of my favorite fajita seasoning and keep it in the spice cabinet for when I need it. I will include the ingredients below, but for more tips and usage ideas, check out the full fajita seasoning recipe.
- 1 tablespoon chili powder
- 1 tablespoon cornstarch
- 2 teaspoons cumin
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon lemon pepper seasoning
- ¾ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper
How to Serve Instant Pot Chicken Fajitas
After the chicken is done cooking, you can either slice it or pull it, depending on your preference.
My favorite, and the most traditional, way to serve fajitas is piled high on a tortilla with peppers and onions, and your choice of toppings, such as sour cream, guacamole, fresh cilantro, salsa, cheese, or pico de gallo. Serve it along with refried beans and rice to bulk up the meal a bit.

Instant Pot Chicken Fajitas
Ingredients
- 2 tablespoons homemade fajita seasoning
- 3 tablespoons lime juice (from 2-3 limes)
- 3 tablespoons olive oil divided
- 2 pounds chicken breast (about 3 to 4 breasts)
- 1 cup chicken broth
- 2 medium bell peppers seeded and sliced
- 2 onions sliced
Instructions
- Combine Fajita Seasoning in small bowl. Set aside.
- In a zip bag or large bowl, combine fajita seasoning, lime juice, and olive oil.
- Poke chicken thoroughly with a fork or skewer to allow the marinade to penetrate through. Add to the marinade mixture and toss to coat completely.
- Cover or seal and refrigerate for at least 2 hours or overnight.
- Set the Instant Pot to the Saute setting and add 1 tablespoon olive oil to heat.
- When the olive oil is hot add the chicken breasts and sear on all sides. SAVE THE MARINADE! You might have to do this in 2 batches. Remove the chicken from the Instant Pot and set aside.
- Pour the chicken broth into the Instant Pot, then place the trivet inside. Place the chicken on top of the trivet.
- Top the chicken with onions and peppers in as evenly a layer as possible. Pour remaining marinade mixture on top of all.
- Close the Instant Pot lid. Set the valve to sealing and set the Instant Pot to Manual/High Pressure for 5 minutes.
- When the time is up, let the Instant Pot release naturally for 10 minutes then quick release remaining pressure.
- Open the lid and transfer the vegetables to a serving dish or plate and the chicken to a cutting board or serving platter. Let the chicken rest for 5 minutes before slicing.
- Slice chicken.
- Serve hot with flour tortillas and your favorite fajita toppings.
Notes
- Marinating your chicken is recommended but can be made quickly without waiting if in a time crunch.
- Storage: Store leftovers covered in the refrigerator for up to 3 to 5 days. Reheat in individual servings in the microwave.
