One Pan Garlic Roasted Chicken and Potatoes
One of my favorite side dishes is red potato wedges with garlic, herbs, and green beans roasted in the oven (You can check that out here). I love it because it's deliciously addictive and really simple to make. I usually pair it with some chicken, cooked in a skillet, since the oven in occupied with the potatoes. But I got to thinking that I could make life even easier if I threw it all in the oven at once.
And I must say I'm patting myself on the back because this One Pan Garlic Roasted Chicken and Potatoes is amazing. Throw it all in the oven, and you have yourself dinner. Add some green beans too, to get your veggies in there!
One Pan Garlic Roasted Chicken and Potatoes
One Pan Garlic Roasted Chicken and Potatoes
Ingredients
- 2 pounds baby red potatoes halved
- 6 skinless chicken thighs
- ¼ cup butter melted
- 1 teaspoon lemon juice
- 1 tablespoon minced garlic
- 2 tablespoons fresh minced parsley
- 2 tablespoons grated Parmesan cheese
- ½ teaspoon dried rosemary
- Salt and pepper
Instructions
- In a medium mixing bowl, mix together butter, lemon juice, garlic, parsley, Parmesan, and rosemary. Set aside.
- Spread potatoes on a large baking sheet.
- Pour half the butter mixture onto potatoes, and stir to completely coat potatoes. Season with salt and pepper liberally.
- Place chicken thighs on baking sheet with potatoes. Season with salt and pepper.
- Brush remaining butter mixture onto chicken.
- Bake in a 400° oven for 25-35 minutes, until potatoes are tender and chicken is cooked through.
