Ahhh. I’m soaking in these last few moments of Summer before my kids head back to school this week. Not looking forward to the hustle and bustle of a busy school year. And I’m also not looking forward to sending my baby boy off to kindergarten. *Tears* Thankfully, both boys will be at the same school this year, so that will be fun for them. Anyway. You can find me outside, soaking up the last of the sun, and sipping on a fruity, icy drink like this Pomegranate Pineapple Slushie. Isn’t it pretty?! I just love the color! And the flavor!
Pomegranate Pineapple Slushies are super easy to make, and they’re the perfect Summer refresher. And they’re also perfect for a back to school cookout celebration!
To make your own Pomegranate Pineapple Slushies, you’ll need a large blender or food processor. You’ll also need some pomegranate juice, pineapple juice, lemon juice, ice, and a possible sweetener of your choosing. You can use honey, sugar, apple juice concentrate, agave nectar, a no-calorie sweetener, or none at all. Combine all ingredients in your blender or food processor and blend until smooth. For a grown up boozy version, you mix in 1 ounce of white rum per drink, but it’s also good as-is for everyone including the kiddies.
Garnish your drinks with a straw and some fresh pineapple or pomegranate! Sit back, relax, and enjoy your refreshing drink in the warm sun!
Pomegranate Pineapple Slushies Recipe
- 1 cup Pomegranate juice
- 3 cups pineapple juice
- ¼ cup lemon juice
- 2 Tbsp agave nectar or apple juice concentrate or honey
- 2 cups ice
- Combine all ingredients in a high-powered blender or food processor and pulse until ice is crushed.
- Blend on high until slushie is smooth and free of ice chunks.
- Taste for sweetness, and sweeten a little more if desired.
- Serve immediately.
