Caramel Pecan Pumpkin Trifle

We're right in the middle of Fall (a.k.a. Pumpkin Season), and quickly approaching Thanksgiving.  This Pumpkin Caramel Pecan Trifle is a delicious dessert recipe that is a perfect alternative to pumpkin pie.  It's also no-bake so it frees up your oven for all the rest of your cooking and baking!

I've included a recipe for homemade caramel sauce, but I think it would be equally as heavenly using store-bought pre-made caramel sauce.  So if you're looking to make this Caramel Pecan Pumpkin Trifle even easier, go ahead and skip that step and grab some from the grocery store.

Caramel Pecan Pumpkin Trifle

Ingredients

  • 1 package cook-and-serve vanilla pudding
  • 3 cups milk
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 cup pumpkin puree
  • chopped pecans
  • Optional: Whipped cream

Caramel Sauce

  • 1 cup sugar
  • ¼ cup water
  • ¾ cup heavy cream
  • 4 tablespoons unsalted butter

Instructions

Pumpkin Pudding

  • In a medium saucepan, add pudding mix, nutmeg, cloves, and cinnamon. Stir to incorporate.
  • Add milk and cook according to package instructions.
  • When pudding has thickened, add pumpkin puree, stirring to combine. Chill in the refrigerator until ready to use.

Caramel Sauce

  • In a medium saucepan, combine the sugar and water over medium-low heat until the sugar dissolves.
  • Increase the heat and bring to a boil, without stirring. Continue boiling until the syrup is a deep amber color, about 5-6 minutes.
  • Remove the sugar mixture from the heat and whisk in the heavy cream (The mixture will bubble).
  • Stir in the unsalted butter.
  • Transfer to a dish and cool.

To Assemble:

  • In a large trifle bowl or individual bowls, layer pumpkin pudding, caramel sauce, and then pecans. Continue until you reach the top of your dish. Top with whipped cream, if desired, and drizzle with remaining caramel sauce and sprinkle with extra pecans.
