As promised, and not a moment too soon, more pumpkin recipes! Well, just one today, but there will be another one tomorrow so stay tuned! I'm really excited to share this recipe with you because it's a classic. Truly. This is also a recipe out of Mr. Gracious' grandma's cookbook. And that woman could bake a mean cake.  I have yet to try one of her recipes that wasn't absolutely to-die-for scrumptious.

So without further ado, here's the Pumpkin Spice Cupcakes recipe you've been waiting for.  Top these moist and festively Fall cupcakes with this pipeable cream cheese frosting, and you've got yourself a delicious Fall treat perfect for any event during Pumpkin season. (And also great at curing pumpkin spice cravings!)

Ingredients

For the Pumpkin Spice Cupcakes

• ▢ 3 cups flour
• ▢ 2 cups sugar
• ▢ 1 teaspoon salt
• ▢ 2 teaspoons baking powder
• ▢ 2 teaspoons pumpkin spice
• ▢ 1 ½ cups vegetable oil
• ▢ 4 eggs beaten
• ▢ 2 cups pumpkin puree

For the Cream Cheese Frosting

• ▢ 1 batch of this Pipeable Cream Cheese Frosting
• ▢ Optional - mix in 1 teaspoon pumpkin spice or cinnamon

Instructions

• In a large bowl, whisk together flour, sugar, salt, baking powder, and pumpkin spice.
• Add oil, eggs, and pumpkin puree and whisk again, just until combined
• Spoon about ¼ cup batter into a lightly greased and lined cupcake pans.
• Bake in a 350° oven for 30-40 minutes, or until cooked through.
• Allow to cool. When cupcakes are cooled, pipe on cream cheese frosting.
