Cheesy Broccoli Stuffing Casserole
I remember eating lots of cheesy broccoli as a kid. I'll be the first to admit, I was a dreaded picky eater. I have enough trouble with my mostly-non-picky eaters! I can't imagine how my parents dealt with it. Well, okay. I can. It was cheese. Because to this day, if you put cheese on something, I will eat it. So cheesy veggies it was!
Thankfully I've outgrown my picky eating, but not my love of cheese. Which is why I love this Cheesy Broccoli Stuffing Casserole. It's creamy and cheesy mixed with broccoli and topped with crunchy stuffing. Cheesy Broccoli Stuffing Casserole is an all-in-one side dish, perfect for Thanksgiving. You can knock out the veggies and the stuffing all in one swoop!
This Cheesy Broccoli Stuffing Casserole calls for cream of chicken soup, but any "cream of" soup will work.
Cheesy Broccoli Stuffing Casserole Recipe
Cheesy Broccoli Stuffing Casserole
Ingredients
- 1 6 ounces box stuffing mix (chicken or turkey)
- 2 10 ounce bags frozen broccoli florets, thawed and drained
- 1 10 ounce can cream of chicken soup
- 8 ounces Velveeta cubed
Instructions
- Prepare your stuffing according to package instructions. Set aside.
- In a medium saucepan, heat cream of chicken soup and Velveeta cubes over medium heat, stirring constantly until Velveeta is melted
- When soup mixture is completely combined, remove from heat and set aside.
- Place broccoli in a casserole dish.
- Stir in soup mixture with broccoli in the casserole dish. Spread the soup and broccoli even through the dish.
- Top with prepared stuffing.
- Bake for about 30 minutes at 350°, until cooked through and stuffing begins to brown.
- Serve warm along side your favorite meal.

Making this tonight. I make cheesey broccoli casserole with broccoli cheese soup and it's a no leftovers dish. I'm anxious for the twist of the stuffing ( cornbread ) on top. Yummy, heading to the store now. Thank you for sharing your recipes.
