Another Tex-Mex variation on tacos. Because you just can’t go wrong, really. I mean casseroles are yummy. Tacos are yummy. Taco casseroles… doubly yummy! Simple math. I love this particular cornbread taco casserole recipe because the prep work is super easy and fast. Plus, the warm cornbread on top makes a filling and cozy addition. It is really good. And the perfect way to warm you up on a chilly day. Mmmm…

To make your own Cornbread Taco Casserole, just brown ground beef with chopped onion in a large skillet over medium heat. Drain and return to skillet. Stir in taco seasoning, corn, salsa, and water. Bring to a simmer for about 5 minutes. Pour the mixture in a 9″x 13″ casserole dish and sprinkle liberally with cheesy goodness. Then mix up your cornbread ingredients in a separate bowl. Combine cornbread mix, eggs, and milk (and a little honey, too, if you want.). Pour mixture on top of cheese layer. Then bake at 350° for about 45 minutes until cornbread is set. Serve with a dollop of sour cream. Enjoy!

Ingredients

2 pounds ground beef
1 medium onion chopped
2 packets taco seasoning
1 15 ounce can corn, drained
1 16 ounce jar salsa
1 1/2 cups water
2-4 cups shredded cheese
2 8.5 ounce packages cornbread mix
2 eggs
2/3 cups milk

Instructions

In a large skillet, brown ground beef with onions. Drain. Return to skillet.
Add salsa, corn, taco seasoning, and water to skillet with ground beef. Stir.
Bring to a simmer while stirring. Allow to simmer for about 5-7 minutes.
Pour ground beef mixture in a 9"x13" casserole dish.
Sprinkle shredded cheese on top. Set aside.
In a medium bowl, add cornbread mix, eggs, and milk. Whisk to combine. Pour mixture over ground beef mixture.
Bake at 350° for about 40-45 minutes until cornbread is set.
Serve warm with a dollop of sour cream.
