I don't think it's officially pumpkin season yet, is it??!! But, yeah. I just couldn't wait anymore. ย I'm starting the #PumpkinSpiceEverything as soon as possible. Starting with truly amazing Pumpkin Spice Sheet Cake with cream cheese frosting. ย Classic!
This Pumpkin Spice Sheet Cake recipe is really easy to make. ย It's not quite a dump cake, but close. ย You pretty much just mix all of the ingredients up in a bowl and pour it into a baking dish. ย Cut and frost. ย I always use this cream cheese frosting recipe because it's really good and you can even pipe with it without it melting on you.
If you don't have any actual "pumpkin spice" seasoning, you can use 1 teaspoon cinnamon, ยฝ teaspoon ginger, ยผ teaspoon nutmeg, and ยผ teaspoon allspice. ย Pretty simple. I find myself using this simple homemade version a lot because it seems like I'm almost always out of pumpkin pie spice.... I wonder how that happens...
If you want to make the cute little pumpkins to decorate like in the pictures, it's actually really easy. ย You just need 2 piping bags, a medium open star tip like a Wilton 32, and a small round tip like a Wilton 4. Place the star tip in one bag with orange color frosting, and just pipe a little blob onto each piece. ย Then fill the other bag with the round tip and green frosting and pipe another little blob on top of the orange blob for the stem.

Pumpkin Spice Sheet Cake Recipe
Pumpkin Sheet Cake
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ยพ teaspoon ground nutmeg
- โ teaspoon ground cloves
- 1 cup brown sugar
- ยฝ cup granulated sugar
- 1 cup cooking oil (such as olive, canola, or vegetable)
- 4 eggs
- 1 can (15 ounces) pumpkin puree
- 1ยฝ teaspoons vanilla extract
Cream Cheese Frosting
- 8 ounces cream cheese softened
- ยฝ cup unsalted butter softened to room temperature
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375ยฐF. Line a metal 9"x13" metal baking dish with parchment paper. Set aside.
- In a large mixing bowl, add flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Whisk to combine.
- In a separate large bowl, add sugars and oil and whisk to combine.
- Add eggs, pumpkin, and vanilla, and whisk again to combine.
- Pour wet ingredients into dry ingredients, and whisk until just combined.
- Pour batter into prepared baking dish.
- Bake in a 375ยฐF oven for about 20 to 26 minutes, or until cooked through.
- Allow to cool completely.
Cream Cheese Frosting
- In a large bowl, beat the cream cheese and butter together on high speed until smooth and creamy.
- Add 3 cups confectionersโ sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes.
- Spread the frosting on the cooled cake. Refrigerate for 30 minutes before serving. This helps set the frosting and makes cutting easier.
- Cover leftover cakeย tightly and store in the refrigerator for 5 days.
