Slow Cooker Chipotle Beef Sandwiches
Pulled meat sandwiches are one of my favorite kinds of dinner recipes. I love that you can just throw them in the Crock Pot and not worry about it again until dinner time. Plus my kids love pulled meat sandwiches because they label all of it as “sloppy joes” (which I also have a slow cooker recipe for HERE), and tell me it's delicious. Messy meat with cheese on a bun for the win! All of that to say that I wanted to share another yummy version of this dinner time favorite today, this slow cooker Chipotle Beef Sandwiches recipe.
These slow cooker Chipotle Beef Sandwiches are a whole different take on the classic sweet and tangy, barbecue flavors of most pulled beef or pork sandwiches. This will take you in the opposite direction to an earthy, zesty, slightly spicy Southwest Chipotle sandwich. It's oh-so-good.
To make your own Slow Cooker Chipotle Beef Sandwiches, you'll need a few basic ingredients including a 2.5-3 pound beef roast, beef broth, a can of diced tomatoes and green chiles, a small can of just diced green chiles, onion, garlic, a can of chipotle peppers, cumin, and some brown sugar to cut the acid. It's longer than my usual easy recipe ingredient list, but it makes up for it by being able to just throw it all in the slow cooker.
And really, those are the directions. Pour everything except the roast into the slow cooker, and give it a stir. Then put the roast in the slow cooker on top and spoon a little of the mixture on top. Cover and cook on Low for about 8 hours until the meat is cooked through and ready to shred. When it's done cooking, remove the roast from the Crock Pot to shred, and then return it to the slow cooker and stir to mix it all together.
You can serve pretty much right after it's shredded. Serve your slow cooker Chipotle Beef Sandwiches on buns with cheese. We used some onion potato buns to serve our sandwiches and topped it with some creamy, spicy Pepper Jack cheese. So good. Enjoy!

Slow Cooker Chipotle Beef Sandwiches
Ingredients
- 3 pound beef chuck roast
- ½ cup beef broth
- ⅓ cup chopped Chipotle peppers and 1 tablespoon of the sauce they're in
- 1 large onion chopped
- 6 garlic cloves minced
- 1 10 ounce can diced tomatoes and green chiles
- 1 4 ounce can diced green chiles
- 2 teaspoons cumin
- 2 tablespoons brown sugar
For Serving
- 8-10 hamburger buns
- 8-10 slices of cheese We use Pepper Jack
Instructions
- Place all ingredients except roast, buns, and cheese in your slow cooker. Stir to combine.
- Season beef roast with salt and pepper. Place beef roast in the slow cooker, and spoon some of the mixture on top.
- Cook on Low for about 8 hours.
- Remove roast from slow cooker.
- Shred beef. Then return to Crock Pot and stir to incorporate.
- Serve on buns topped with cheese.
