For this recipe, I do, very briefly. No need to do it overnight. They'll just sit in hot water while you prepare the remaining ingredients.

Ingredients

  • 1 pound dried split peas
  • 2 tablespoons olive oil
  • 2 large onions diced
  • 3 garlic cloves
  • 1 cup diced carrots about 2 to 3 large
  • 1 cup diced celery about 2 to 3 ribs
  • 1 large russet potato peeled and diced
  • 1½ cups diced ham
  • 1 ham bone or ham hock
  • 2 teaspoons fresh thyme
  • 4 cups chicken stock
  • 4 cups water
  • 2 bay leaves
  • Salt and pepper to taste
  • Croutons and fresh thyme for serving

Instructions

  • Dump split peas into a large bowl. Cover with hot water. Set aside.
  • In a large skillet over medium heat, add olive oil. Add onion, and cook until tender and translucent, about 5 minutes.
  • Add garlic, and cook for an additional 2 minutes, until fragrant.
  • Drain split peas and add to slow cooker with all remaining ingredients, including cooked onion and garlic. Stir to combine.
  • Cover and cook on Low for 8 hours or high for 4 to 5 hours.
  • When ready to serve, remove ham bone and bay leaves. Season with salt and pepper to taste. Serve hot with croutons and fresh thyme.

Notes

  • Storage: Leftovers taste even better the next day! Store leftovers covered in the refrigerator for up to 5 days. Reheat in individual portions in the microwave or larger portions on the stovetop.
  • Freezer Directions: Prepare and cook soup. Allow to cool to room temperature. Transfer to a freezer dish or bag. Cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating in a large pot on the stovetop.
