Slow Cooker Cheeseburger Soup is a warm, comforting family favorite that we make over and over again. It's a creamy, comforting, hearty soup brimming with hamburger, bacon, cheese, and potatoes.
Cheeseburger-lovers and picky eaters will both rejoice! This one is a fan-favorite, all around. It's simple to fix it and forget it in the slow cooker, and can even be made ahead and frozen!
Top it with all of your favorite cheeseburger toppings to finish the effect, and you'll find yourself with the best warm bowl of cheesy, hearty goodness.
Swaps, Add-ins, and Toppings
- Turkey - Use turkey instead of ground beef if you're a fan of turkey burgers.
- American cheese - Use chopped American cheese from the deli instead of cheddar for an ultra creamy version. Some recipes
- Cheese - Using a sharp cheddar will really bring the cheese flavor forward to highlight the cheeseburger flavor. But you can also experiment with any of your favorite cheese, including smoked gouda, Colby Jack, Monterey Jack, Pepperjack, or whatever your heart desires. I highly recommend grating your own cheese fresh, as it melts the best this way.
- Beans - I love adding beans to recipes to give them an extra protein and fiber boost. You can use canned, cooked (drained and rinsed) beans instead of potatoes or in addition to potatoes.
- Sweet Potatoes - Sweet potatoes can be used in place of Russets to add some more nutrients and color.
- Bacon - Bacon is amazing and definitely goes on cheeseburgers. However, I highly recommend using it as a topping rather than in the actual soup, as it will get soft and mushy if you cook it in the soup. It will stay crispy and flavorful if you add it as a topping at the end.
- Toppings - The sky is the limit! Insert all of your favorite burger toppings here: pickles, bacon, extra cheese, croutons, pickled jalapenos, or green onions are all a great place to start!
- Stovetop - Cooking this stovetop version will be a bit quicker if you are in a hurry!

In my opinion, soup and salad is almost always the way to go! Serve this up with a nice, fresh green salad.
The other fun part about soups is the bread for dipping! So add a nice warm crusty bread as an extra side. Or for even more fun, and to play on the cheeseburger theme, dip in some fries, waffle fries, or tater tots.

Slow Cooker Cheeseburger Soup
Ingredients
- 1 pound lean ground beef
- ½ large sweet onion diced
- 4 garlic cloves minced
- 4 medium Russet potatoes peeled and cubed
- 1 cup shredded carrots
- 1 cup finely chopped celery
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 cups chicken broth
45 Minutes Before Serving
- ¼ cup butter
- ¼ cup flour
- 2 cups milk
- 12 ounces cheddar shredded
- Salt & pepper to taste
- Crispy bacon crumbles and sliced green onions *optional* for garnish
Instructions
- In a skillet over medium heat, cook ground beef with onions and garlic until cooked through and no longer pink.
- Once ground beef is cooked, drain any extra grease and transfer ground beef to a large slow cooker.
- To the slow cooker, add potatoes, carrots, celery, basil, salt, pepper, and chicken broth. Stir to combine.
- Cook on low for about 7 hours or on high for 4 to 5.
About 45 minutes before serving
- In a large pot over medium heat, melt butter.
- Add the flour. Whisk to combine, and allow to continue cooking for another 1-2 minutes, until heated through.
- Slowly add the milk, about a ¼ cup at a time, stirring to prevent lumps.
- Allow the mixture to heat through to steaming, then add shredded cheese. Stir until cheese is melted and incorporated.
- Add cheese mixture to soup, and stir to combine.
- Cook for an additional 20 minutes to allow flavors to meld.
- Serve warm topped with crumbled bacon and green onions if desired.
Notes
- Storage: Store leftovers covered in the refrigerator for up to 5 days. Reheat in a pot on the stove over medium heat or in a microwave-safe bowl in the microwave for 1-2 minutes.
- Freezer Directions: Prepare soup according to recipe instructions. Allow to cool. Then transfer to a freezer dish or bag. Freeze for up to 3 months. To use, thaw in the refrigerator overnight. Reheat in a large stockpot over medium heat.
