Ingredients

  • 2 pounds boneless skinless chicken breast uncooked, cubed
  • 8 ounces ham chopped
  • 8 ounces Swiss cheese shredded, divided
  • 1 can (10.5 ounces) cream of chicken soup
  • ½ cup sour cream
  • ¼ cup milk
  • 2 tablespoons Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 box (6 ounces) stuffing mix
  • ¼ cup finely grated Parmesan
  • ⅓ cup butter melted

Instructions

  • Toss chicken, ham, and half the Swiss cheese in the bottom of the slow cooker.
  • In a separate mixing bowl, add cream soup, sour cream, milk, mustard, garlic powder, onion powder, and black pepper and whisk to combine.
  • Pour soup mixture over chicken and spread evenly.
  • Top with remaining Swiss cheese.
  • Cover and cook on LOW for 3-4 hours.
  • About 1 hour before serving, combine stuffing mix, Parmesan, and butter in a medium mixing bowl. Stir to combine. Sprinkle over Swiss cheese in the slow cooker. See cooking note.
  • Serve warm.

Notes

  • Stuffing mixture: You can place the stuffing mixture in before you start cooking for a more hands off recipe, but the stuffing will get very, very soft. The flavor is still delicious, but the texture is a little different. For firmer crumbles, add it an hour before the dish is done cooking.
  • Storage: Store covered in the refrigerator for up to 5 days.

    Do you think this could be cooked in a large amount in a slow roaster? If so, how long and what temperature?

    Here's what I would change. Use half of the Dijon mustard the recipe calls for. Mix the cream sauce into the chicken and ham and then top with cheese. Use a bit more butter (we used an entire stick) to get a perfect crumb topping with the stuffing mix and parmesan.
