No Bake Pumpkin Chocolate Cheesecake
I always kind of feel like I need to have some elaborate story when I’m sharing recipes with you, but a lot of the recipes I try should just be attributed to my compulsive ADD tendencies. Like this one. It has no great story. Here’s how it really happened.
Pumpkin is delicious. Chocolate is delicious. And no bake cheesecake is delicious AND easy. Annnd I just wanted to know what happened if you combined them all at once. Turns out you get a No Bake Pumpkin Chocolate Cheesecake that is equally as delicious as all of it’s parent flavors.
My No Bake Pumpkin Chocolate Cheesecake recipe includes a no bake pumpkin spice cheesecake filling with chocolate chips sitting on a simple and tasty chocolate Oreo crust. It’s extremely easy to make, and I think it would be perfect for the holidays. I’ll be making another one to bring to Thanksgiving this year, for sure! Tell me what you think!
No Bake Pumpkin Chocolate Cheesecake Recipe
- 1 Oreo Crust RECIPE HERE, chilled
- 2 8 ounce packages cream cheese, softened
- 3/4 cup powdered sugar
- 1 15 ounce can pumpkin puree
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin spice
- 1 1/2 cups chocolate chips
- Whipped cream for serving
To a large mixing bowl, add softened cream cheese and powdered sugar. Cream together until smooth.
Add pumpkin puree, maple syrup, and vanilla and beat again until combined and smooth.
Add pumpkin spice and beat again until fully incorporated.
Fold in chocolate chips.
Pour pumpkin cheesecake mixture into chilled crust, spreading evenly.
Cover and chill for at least 2 hours before serving.
Serve cool topped with whipped cream, extra chocolate chips or chocolate sauce.
