White Chocolate Peppermint Brownies
Another peppermint recipe in honor of the season! These white chocolate peppermint brownies have a fudgy, decadent, and super chocolately brownie topped with white chocolate peppermint bark. It is so rich, festive, and delicious. The perfect treat to munch on while you drink a hot cup of coffee (preferably of the peppermint variety, like my favorite with this homemade peppermint coffee creamer.)
Of course, you can make these white chocolate peppermint brownies with box mix brownies, but I just love this super rich recipe. If you love chocolate, it doesn't get better than this.
A couple tips to make your white chocolate peppermint brownies amazing. Be sure to only microwave the chocolate in 30 second increments and only just until the chocolate is melted. If the chocolate gets melted too long, it will get hard and taste burnt. Not good. Also, after you spread the white chocolate and sprinkle peppermint on top, I suggest scoring the chocolate so that it's easier to cut once it has hardened. To do this, just run a knife across where you plan to cut the brownies to leave indented markings. Then you can nice clean lines when the brownies are cooled and you're ready to eat. Enjoy! White Chocolate Peppermint Brownies
Ingredients
For the brownies
- 1 cup butter
- 16 ounces baking chocolate coarsely chopped
- 1 ½ cups sugar
- ½ cup brown sugar
- 6 large eggs
- 1 teaspoon vanilla
- 1 ¼ cup flour
- ¼ cup cocoa powder
- ½ teaspoon salt
- 1 12 ounce package semi-sweet chocolate chips
For the peppermint bark topping
- 1 12 ounce package white chocolate chips
- ⅔ cups crushed peppermint candies or candy canes
- 2 teaspoons vegetable oil or shortening
Instructions
- Place butter and baking chocolate in a medium microwave-safe bowl. Microwave for 30 seconds, then stir. Repeat in 30 second increments, stirring after each one, until chocolate is fully melted. Set aside to cool slightly
- Line and grease a 9"x13" baking dish. Set aside.
- In a large mixing bowl, add sugars and whisk together until combined.
- Pour cooled chocolate mixture and vanilla. Whisk together until combined.
- Add eggs, one at a time, whisking until smooth.
- Fold in flour, cocoa powder, and salt, stirring until just smooth.
- Gently fold in chocolate chips.
- Pour batter into prepared dish.
- Bake at 350 for 30-35 minutes, until cooked and a toothpick inserted comes out clean.
- Allow to cool completely, still in the baking dish.
For the Peppermint White Chocolate topping
- In a medium microwave-safe mixing bowl, add white chocolate chips and oil. Microwave for 30 second intervals, stirring in between each interval.
- When melted, spread melted white chocolate over brownies. Then sprinkle with crushed peppermint candies.
- While white chocolate is still soft, pull brownies out of baking dish by the lining and cut into squares.
- Allow chocolate to set before serving (or not because who doesn't love gooey, melted chocolate?!)
