I love having the kids help me in the kitchen.  I mean it usually takes a tad longer, but that's okay.  We all have fun anyway.  Apparently my kids also feel the same, so much so that they frequently confiscate my cooking tools to play with by themselves (Don't worry, all the dangerous ones are out of reach!)

Their most recent theft was my potato peeler.  I haven't been able to find it for two weeks, but I'm refusing to buy a new one because it has to be somewhere!  Anyway, this poses a pretty big problem because we LOVE our potatoes, and it's made dinner time a total hassle. But thankfully, I've found an amazing, simple, fresh alternative to peeling and whipping up your own potatoes, Simply Potatoes.

Simply Potatoes are fresh, not frozen, potatoes located in the refrigerated section at the grocery store.  I found the Simply Potatoes Diced Potatoes with Onions called for in the recipe right next to the eggs and other breakfast items.  They're just REAL potatoes, already peeled, diced, shredded, or mashed, so you can have your fresh potatoes with almost no effort, which, for a busy mom (or one that has her potato peeler stolen by the munchkins), is pretty awesome.

Ingredients

  • 1 20 ounce package Simply Potatoes Diced Potatoes with Onions
  • ½-1 pound smoked sausage sliced
  • 1 8 ounce package cream cheese
  • ½ cup milk
  • ⅓ cup sliced chives

Instructions

  • Combine all ingredients in your slow cooker. Stir to combine the ingredients as much as possible.
  • Cook on High for 2-3 hours or Low for 4-6 hours, stirring occasionally.
  • Serve warm topped with additional chives and garnished with bacon.

    I love my crockpot. I use it a few times a week even though there are only two of us in the house. I freeze the "planned overs" as my mother used to call them. I've been looking at a new more modern one for us. That's how I found your blog, looking for crockpot recipes.

    Today's fav is your SLOW COOKER BEEF STEW RECIPE; I make mine almost the same way though I have taken to not putting the potatoes in until the end and just boiling them. I'm finding that they are getting too infused with the stew flavor.
