Do I Really Need a Candy Thermometer?

Sorry, but for this recipe, you really do! In order to get that smooth, silky texture, and candy thermometer must come to the right temperature. Too cool, and it won't set, and too hot, and it will be too hard. Thankfully, candy thermometers are easy to find, cheap, and a useful kitchen tool. This one on Amazon also doubles as a meat thermometer and has a clip to hook onto the pot for candy and frying.

Topping Ideas

You can decorate your eggnog fudge any way you choose or not at all. It will still taste festive and amazing either way. But here are some suggestions if you'd like to up the style factor.

  • Nutmeg - Freshly ground nutmeg can be both beautiful and aromatic on top of this fudge. Ground nutmeg can also be used. Be careful sprinkling this on as too much will be overpowering.
  • Sprinkles - Festive sprinkles can save the day on most holiday treats. Here are some of my favorite dye-free Christmas sprinkles, and you can find more beautiful ones in stores, Etsy, or Amazon.
  • Baking Chips - Butterscotch or cinnamon chips would add an extra burst of spiced or sweet flavor while looking pretty on top.
  • Nuts - Chopped pecans or walnuts would add interest, crunch, and deep nutty flavor. For even more spiced flavor, try these candied pecans on top!

How to Make Ahead and Store Eggnog Fudge

This eggnog fudge is a great recipe to make for Christmas cookie trays because you can make it up to 2 weeks in advance, and it keeps well. Simply store in an airtight container on the counter.

Fudge can also be stored in the refrigerator for slightly longer, but the texture will not be quite as soft.

Can You Freeze Eggnog Fudge?

Yes, you can! You can freeze the full sheet of fudge or in individual pieces. Tightly wrap cooled fudge in parchment paper or wax paper, then foil. If freezing them in individual pieces, place in a labeled freezer bag to freeze. Freeze for up to 2 months.

Thaw the fudge overnight in the refrigerator before using to thaw slowly and prevent condensation. Bring to room temperature before serving.

Ingredients

  • ½ cup unsalted butter
  • ¾ cup eggnog
  • 2 cups granulated sugar
  • 1 package (12 ounces) white chocolate chips
  • 1 jar (7 ounces) marshmallow creme
  • 1 teaspoon rum extract
  • ¼ teaspoon ground nutmeg (plus more for topping)

Instructions

  • Line an 8 or 9-inch square pan with parchment paper. Set aside.
  • In a medium heavy bottom saucepan, combine butter, eggnog, and sugar. Heat over medium heat.
  • Bring mixture to a rolling boil, stirring constantly. Continue boiling about 7 minutes, until a candy thermometer reaches 234°F, stirring to prevent scorching. Remove from heat.
  • Working quickly, add white chocolate chips, marshmallow creme, rum extract, and nutmeg. Stir until melted and smooth.
  • Pour into prepared pan and smooth. Sprinkle on more nutmeg for garnish, if desired.
  • Let stand at room temperature until cooled and set.
  • When completely cool, cut into squares. Store in a covered container in the refrigerator.
