This Mushroom Chicken Bake is a no-fuss, one-dish wonder that combines tender chicken and perfectly sautéed mushrooms in a creamy sauce.

This recipe is easy to assemble and perfect for busy weeknights. The combination of mushrooms, cream of mushroom soup, and seasonings creates a rich and satisfying taste. With tender chicken breasts smothered in a creamy mushroom sauce, it has a mild, comforting flavor profile that the whole family will enjoy.

Can I Use Other Types of Mushrooms?

Yes! Cremini or baby portabello mushrooms make great substitutes for white mushrooms.

Mushroom Chicken Bake Variations

Mushroom Chicken Bake is a canvas for creativity! Whether you prefer a cheesy, veggie-packed, or spicy version, these variations ensure there’s something for everyone. Experiment with these ideas to make the dish your own!

  • Cheese - Sprinkle some of your favorite shredded cheese on top for an even richer comfort food flavor. Mozzarella, Swiss or Gruyere, Parmesan, or a smoky gouda would all be excellent with this dish.
  • Bacon - Bacon pairs beautifully with the creamy mushroom flavor. Crumble cooked bacon over the chicken before adding the sauce for a smoky, savory touch.
  • Herbs - Enhance the flavor by adding minced thyme, rosemary, parsley, or oregano to the sauce. Fresh herbs like can be sprinkled over the dish just before serving.
  • Mushrooms - If you don't like mushrooms, this is probably not the meal for you. But this dish will work with some swaps if you still want to give it a try. Use onions or bell peppers instead of mushrooms, and a different cream soup to omit all of the mushrooms.
  • Cream soup - While the recipe calls for cream of mushroom to give more mushroom flavor, you can also use cream of chicken, celery, or potato if you have those on hand.
  • White wine - Add 2 tablespoons of white wine for an ultra-rich, elevated complex flavor that complements the mushrooms perfectly.
  • Chicken - Substitute chicken breasts with chicken thighs for a juicier, more flavorful dish.
  • Spice it up - Add a dash of cayenne pepper, red pepper flakes, or hot sauce to the sauce for a kick of heat. You can also add fresh jalapenos to saute with the mushrooms, and add even more jalapeno slices on top before baking.
  • Onions or Shallots and Garlic - Add garlic, onion, or shallots while sauteing the mushrooms for a more robust taste.

What to Serve with Mushroom Chicken Bake

Mushroom chicken bake is such a versatile dish, it can be served with almost anything!Rice, quinoa, or noodles are all great options because they can soak up extra creamy mushroom sauce.

Classic mashed potatoes or these air fryer baby potatoes would also add a hearty, filling element to the meal.

Garlic bread is perfect for dipping in that rich sauce!

Round out the meal with a vegetable. It can be as quick and easy as a tossed green salad or steamed vegetables, or you can roast some veggies, saute up these bourbon carrots, or try some shallot green beans.

Freezer Instructions

Baked Mushroom Chicken can be prepared ahead of time and frozen for a busy night or to give to a new mom or friend in need.

Prepare the full recipe but stop before baking. Then cover and freeze for up to 3 months.

When ready to cook, thaw the dish completely, by placing in the refrigerator for 24-48 hours.

Add an additional 10 minutes onto the baking time to account for the cold dish.

Ingredients

  • ½ tablespoon olive oil
  • 8 ounces sliced white mushrooms
  • 3 to 4 boneless skinless chicken breast cut in half length-wise
  • salt & pepper
  • 1 can (10 ounces) cream of mushroom soup
  • ½ cup half and half
  • 1 teaspoon ground paprika
  • 2 teaspoons dried parsley

Instructions

  • Preheat oven to 350°F.
  • Place chicken breasts in a 9"x13" baking dish. Season with salt and pepper. Set aside
  • In a medium skillet, heat oil. Add mushrooms and saute until tender. Remove mushrooms from heat.
  • Add cream of mushroom soup and half-and-half, and whisk to combine.
  • Pour over seasoned chicken breasts, making sure to fully coat each breast.
  • Season with paprika and parsley.
  • Bake in a 350°F oven for about 40 to 45 minutes, until chicken is cooked through.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 to 5 days. Reheat in the microwave.
  • Freezer Directions: Prepare recipe but do not bake. Cover and freeze for up to 3 months. Thaw in the refrigerator overnight. Bake as instructed, adding an additional 10 minutes to account for the cold dish.
