Cooking delicious, juicy beef tacos for a crowd has never been so easy! Crockpot Taco Meat is a game changer!

You will not believe how easy this dump-and-go recipe is. It’s made with just a handful of simple ingredients, requires no pre-browning, and is jam-packed with flavor slow simmering in salsa, seasoning, and its juices.

Can You Put Raw Ground Beef in the Crock Pot?

Yes! Most meat you put in the slow cooker is raw. Ground beef is no different, and it will be cooked all the way through.

Do I Need To Brown the Beef Before Slow Cooking?

Nope! Save yourself the work and just dump it all in the slow cooker.

Do I Have to Use Ground Beef?

Ground beef is most commonly used in tacos in America, but you can also use ground turkey, ground pork, or ground chicken. For this recipe, I would stick to ground meats, as the cook times and instructions are based on ground beef.

Can I Use Store Bought Taco Seasoning?

Sure! I always make my own because it's super simple and cheap. But if you have a store-bought seasoning you love, go ahead and use it.

What to Serve with Crockpot Taco Meat and the Best Taco Toppings

Some classic sides for tacos are refried beans and rice.

And remember the best part about tacos! All your favorite toppings! Try sour cream, salsa, guacamole, pico de gallo, fresh diced tomatoes, chopped sweet or red onion, fresh cilantro, olives, lettuce, and cheese such as shredded cheddar, a shredded Mexican blend, or a Mexican crumbly cheese such as queso fresco or cotija cheese.

What to Do with Leftover Crockpot Taco Meat

If you have extra crockpot taco meat but you're tired of your typical taco, try some of these delicious ideas.

  • Nachos - I like to bake mine on a sheet pan with cheese, meat, and beans and then load it up with all of our favorite toppings.
  • Quesadillas - Sprinkle some taco meat and cheese on a tortilla. Fold it in half and quickly warm it up on the stove with a little oil until the cheese is melty.
  • Mac and Cheese - For a Tex-Mex meal, you can add leftovers to a homemade mac and cheese like this one, or even throw it into a box mac and cheese to dress it up a bit.
  • Taco Dip - Leftovers make this layered taco dip even easier! You can also try adding the taco meat to a warm dip, such as this Texas trash dip.
  • Taco Salad - A family favorite and a great way to stretch every taco night. Try this fun Doritos Taco Salad.
  • Stuffed Shells - This stuffed shell recipe uses pre-cooked taco meat so the leftovers are a perfect time saver in this fun, creamy, zesty dish!
  • Taco Stuffed Zucchini - These make great flavorful meal prep lunches and are a great way to stretch any leftovers.
  • Eggs - Add crockpot taco meat to an egg scramble for extra bold flavor or make breakfast tacos or burritos.
  • Taco Pizza - Use a store bought crust to dress up an (almost) homemade taco pizza with all of your favorite toppings.
  • Walking tacos - Tacos on the go, for the win!
  • Sliders - Add some meat to buns and add a slice of cheese for taco sandwich.
  • Baked Potatoes - Pile taco meat onto a baked potato or baked sweet potato instead of a tortilla with all of your favorite toppings.
  • Burritos - Add it to burritos! If you don't have a lot left and you need to stretch, try these rice and black bean burritos. The taco meat will add extra protein and flavor, but the original burritos will fill in the gaps!

Ingredients

  • ½ cup red enchilada sauce
  • ½ cup salsa
  • 2 pounds lean ground beef

Taco Seasoning

  • 1 tablespoon chili powder
  • ½ tablespoon cornstarch
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt or more to taste
  • ½ teaspoon black pepper
  • Pinch cayenne pepper

Instructions

  • Mix all taco seasoning ingredients in a bowl, and set aside.
  • Pour enchilada sauce and salsa in the bottom of the slow cooker.
  • Place ground beef on top, breaking it up a little bit.
  • Pour seasoning on top of ground beef.
  • Cook on Low for 3-4 hours.
  • When the meat is finished cooking, remove from the slow cooker with a slotted spoon to leave juices and crumble the beef with 2 forks.
  • Transfer juices to a cup or liquid measuring cup, and skim off any fat.
  • Return both remaining juices and beef to the slow cooker and stir to combine.
  • Serve warm using a slotted spoon.

Notes

  • Storage: Store covered in the refrigerator for up to 3-5 days. Reheat in the microwave or in a skillet.
  • Freezer Directions: Transfer cooked and cooled pork to a freezer bag or container. Store for up to 3-6 months. Thaw in the refrigerator overnight.
