Homemade Caesar Dressing

Rich, creamy, and packed with bold, savory flavor, this Homemade Caesar Dressing is everything you love about the classic, only way better. Itโ€™s smooth, tangy, garlicky, and loaded with real Parmesan for that signature restaurant-style taste.

What really sets this version apart is the homemade mayo base. It creates an ultra-creamy texture and fresh flavor that store-bought dressings just canโ€™t match. The extra virgin olive oil really shines through, combining with the bright lemon and garlic, and nutty parmesan perfectly. Whether youโ€™re tossing it with crisp romaine, drizzling it over wraps, or using it as a dip, this dressing instantly upgrades any meal.

And while it tastes fancy, itโ€™s surprisingly simple to make with pantry staples and an immersion blender.

Why Youโ€™ll Love This Recipe

  • Restaurant-quality flavor at home - Bold, tangy, and perfectly balanced with that classic Caesar taste.
  • Ultra creamy texture - The homemade mayo base makes it extra smooth and rich.
  • Simple ingredients - No preservatives, fillers, or seed oils. Just real, flavorful ingredients.
  • Versatile - Perfect for salads, wraps, sandwiches, dips, and more.

What Is Caesar Dressing?

Caesar dressing is a creamy, savory salad dressing known for its bold umami flavor. Traditional versions include ingredients like anchovies, garlic, lemon juice, Parmesan cheese, and oil.

This version keeps all those classic flavors but uses a quick homemade mayonnaise base to create a smooth, rich consistency that blends everything together beautifully.

Tips & Variations

  • Traditional Caesar ingredients - Authentic Caesar dressing typically includes anchovies (or anchovy paste), which is what gives it that classic savory flavor.
  • Use high-quality olive oil - Since olive oil is a main ingredient, using a good quality extra virgin olive oil can make or break the flavor of your dressing.
  • Use anchovy paste (donโ€™t skip it) - It doesnโ€™t taste fishy, but it adds that signature savory Caesar depth and umami flavor.
  • Use fresh Parmesan - Freshly grated Parmigiano-Reggiano gives the best flavor and smooth texture. Pre-shredded wonโ€™t blend as well, and is coated in starch which will bring extra flavors and thickeners.
  • Garlic powder is preferred - Garlic powder blends more smoothly into cold dressings and gives that classic restaurant-style flavor. Fresh garlic can be sharper and more pungent.
  • Use store-bought mayo if needed - Substitute 1 cup mayonnaise in place of the homemade mayo base to save time.
  • Adjust consistency - If using store-bought mayo or if your dressing is too thick, whisk in a little olive oil until it reaches your desired consistency.
  • Make it lighter - Swap part of the mayo for Greek yogurt for a lighter option.
  • No immersion blender? - You can use a regular blender or whisk by hand, though an immersion blender is quickest and most reliable.
  • Using raw egg safely - If youโ€™re concerned about the raw egg in the homemade mayo, use pasteurized eggs or substitute with store-bought mayo.
  • Make ahead - This dressing can be made ahead and actually tastes even better after a few hours as the flavors meld together.

How to Use Caesar Dressing

This dressing is so much more than just salad dressing. Try it:

  • Tossed with crisp romaine for a classic Caesar salad
  • As a spread for wraps and sandwiches
  • Drizzled over grilled chicken or shrimp
  • As a dip for veggies, fries, or chicken tenders
  • Mixed into pasta salad for a creamy twist

Storage

Store homemade Caesar dressing in an airtight container in the refrigerator for up to 3 to 5 days.

Because this recipe contains raw egg in the homemade mayo, itโ€™s best enjoyed fresh and kept properly chilled.
