What Is Caesar Dressing?
Caesar dressing is a creamy, savory salad dressing known for its bold umami flavor. Traditional versions include ingredients like anchovies, garlic, lemon juice, Parmesan cheese, and oil.
This version keeps all those classic flavors but uses a quick homemade mayonnaise base to create a smooth, rich consistency that blends everything together beautifully.
Tips & Variations
- Traditional Caesar ingredients - Authentic Caesar dressing typically includes anchovies (or anchovy paste), which is what gives it that classic savory flavor.
- Use high-quality olive oil - Since olive oil is a main ingredient, using a good quality extra virgin olive oil can make or break the flavor of your dressing.
- Use anchovy paste (donโt skip it) - It doesnโt taste fishy, but it adds that signature savory Caesar depth and umami flavor.
- Use fresh Parmesan - Freshly grated Parmigiano-Reggiano gives the best flavor and smooth texture. Pre-shredded wonโt blend as well, and is coated in starch which will bring extra flavors and thickeners.
- Garlic powder is preferred - Garlic powder blends more smoothly into cold dressings and gives that classic restaurant-style flavor. Fresh garlic can be sharper and more pungent.
- Use store-bought mayo if needed - Substitute 1 cup mayonnaise in place of the homemade mayo base to save time.
- Adjust consistency - If using store-bought mayo or if your dressing is too thick, whisk in a little olive oil until it reaches your desired consistency.
- Make it lighter - Swap part of the mayo for Greek yogurt for a lighter option.
- No immersion blender? - You can use a regular blender or whisk by hand, though an immersion blender is quickest and most reliable.
- Using raw egg safely - If youโre concerned about the raw egg in the homemade mayo, use pasteurized eggs or substitute with store-bought mayo.
- Make ahead - This dressing can be made ahead and actually tastes even better after a few hours as the flavors meld together.
