Ingredients
For the Crust
- 2¼ cups vanilla wafer crumbs
- ½ cup butter melted
- 3 ripe bananas thinly sliced
Cheesecake Filling
- 1½ cups heavy cream divided
- 1 package (3.4 ounces) instant vanilla pudding
- 16 ounces cream cheese softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
Whipped Cream
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Banana slices and vanilla wafers for decorating
Instructions
- In a medium mixing bowl, add vanilla wafer crumbs and butter. Stir to combine.2¼ cups vanilla wafer crumbs, ½ cup butter
- Press crumb mixture onto the bottom and up the sides of a greased 9-in. springform pan or 9-in. square baking pan.
- Arrange banana slices on the bottom of the pie crust. Cover and chill while making the cheesecake filling.3 ripe bananas
- In a medium mixing bowl, whisk together pudding and ½ cup of cream. Set aside to set slightly.1½ cups heavy cream, 1 package (3.4 ounces) instant vanilla pudding
- In a large bowl, whip remaining cream until stiff peaks form. Set aside.1½ cups heavy cream
- In a separate large mixing bowl, add cream cheese, powdered sugar, and vanilla, and beat to combine until smooth and creamy.16 ounces cream cheese, 2 teaspoons vanilla extract, 1 cup powdered sugar
- Add pudding mixture and beat again until smooth.
- Add whipped cream and beat again to combine.
- Remove the crust from the refrigerator, and pour the filling onto the crust. Spread evenly.
- Place covered in the refrigerator until set, about 2 hours.
- To a large mixing bowl, add 1 cup heavy cream, powdered sugar, and vanilla extract. Whip on high until stiff peaks form.1 cup heavy cream, 2 tablespoons powdered sugar, 1 teaspoon vanilla extract

Notes
- Prevent Bananas From Browning: Very lightly spritz or brush banana slices with lemon juice prior to arranging in pie crust shell, and prior to using as garnish. Because they will still brown, it’s best to assemble up to 1 day in advance, and decorate with banana slices just before serving.
- Storage: Cover leftovers and store in the refrigerator for up to 5 days.
