Lemon Pepper Baked Catfish
I feel like I share a catfish recipe every year around this time, so why don't we just make it an annual tradition. We have a catfish festival in our town every Summer, so once I sense the warm weather, I just get catfish on my brain, I guess. I've shared deep-fried, pan-fried, and a spicy baked version. Today I wanted to share a basic but zesty, baked version with this Lemon Pepper Baked Catfish recipe.
To make this Lemon Pepper Baked Catfish you just need 5 ingredients and 30 minutes. Perfect for Summer when you don't want to waste all of the beautiful weather in the kitchen. So in a shallow dish, add cornmeal, lemon pepper seasoning, garlic powder, and salt. Stir to mix it together really well. Place a catfish fillet in the cornmeal dish and make sure it's fully coated in the cornmeal mixture. Then place it on a baking sheet, and repeat the cornmeal coating with the remaining catfish. Bake at 400° for about 20 minutes, until the catfish is totally cooked through and flaky and the cornmeal crust is golden.
Serve warm with some chips (or some fries, for us Americans). We love broccoli with our Lemon Pepper Baked Catfish for a green addition to your plate.

This is my second time making this dish and it is absolutely delicious and easy to make. The only thing is if your baking more fish then the recipe have, double your ingredients. This is my go to recipe for lemon pepper baked fish. Thanks The Gracious Wife.
