What Kind of Salmon Should I Use?

Most cooked salmon will work for this recipe! This is a great way to use up leftover cooked salmon, if you happen to have any. You can also use the canned or pouch versions. I prefer the pouch of the two options, as I find they have less bone and skin pieces.

Stay away from cold smoked salmons as the texture will be off.

Recipe Variations

  • Gluten-Free: Use gluten free breadcrumbs to make this recipe gluten free.
  • Low-Carb: Swap burger buns for lettuce wraps or portobello mushroom caps.
  • Asian-Inspired: Add soy sauce, ginger, and green onions to the salmon mixture, and top with sesame seeds and a drizzle of hoisin sauce.
  • Cheesy Delight: Mix shredded cheddar or parmesan into the patty mixture for extra richness.
  • Herb-Crusted: Coat the patties in finely chopped fresh herbs before cooking for an extra burst of flavor.
  • Grilled: Bring these burgers outside! I recommend chilling for 15 to 20 minutes after forming into patties to help them retain their shape on the grill. Heat a grill to medium and brush the grates with oil or heat olive oil on medium heat in a large nonstick skillet or grill pan. Cook the salmon burgers for 4 to 5 minutes on each side, turning once.

Ingredients

  • 12 ounces cooked salmon (canned works great!)
  • 2 eggs
  • 1 tablespoon Dijon mustard
  • ½ tablespoon lemon juice
  • ½ cup breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh dill
  • 1 tablespoon fresh chopped chives
  • Oil for pan-frying

Instructions

  • In a large mixing bowl, add salmon and flake apart.
  • Add remaining burger ingredients, and mix together until combined.
  • Form into 4 patties and set aside.
  • Heat olive oil in a large skillet over medium heat. Line a plate with a paper towel. Set aside.
  • Fry the burgers for a few minutes on each side until brown and crispy.
  • When done cooking, place burgers on paper towel lined plate to absorb extra grease from cooking.
  • Serve warm on a bed of greens or on a bun.

Notes

  • Chill the Patties: Refrigerate the patties for 15-20 minutes before cooking to help them hold their shape better.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop in a skillet, in the microwave, or in an air fryer until warmed through.
  • Freezer Directions: Salmon burgers can be frozen before or after cooking. Place flat on a parchment paper lined baking sheet, and freeze for about 2 hours, until frozen. Transfer to a freezer bag with a piece of parchment paper between each patty. If uncooked, cook following the directions above from frozen. The cooking time will increase due to the coldness. If burgers are cooked, thaw overnight in the refrigerator. Then reheat on the stovetop in a skillet, in the microwave, or in an air fryer until warmed through.
