What is Buffalo Sauce?

Buffalo sauce is named for its birthplace: Buffalo, New York.

It is a rich, tangy, spicy sauce that's made from cayenne pepper hot sauce, butter, vinegar, and spices. This rich combination produces a creamy, spicy sauce that's perfect for sticking to chicken wings and keeps you coming back for more!

What's the Difference Between Buffalo and Hot Sauce?

Buffalo sauce uses hot sauce to get part of its signature flavor, but it also uses butter to add richness and creaminess and help it stick to wings better, as well as extra vinegar for a little extra tang.

What Kind of Hot Sauce Should I Use?

You can use any kind of cayenne pepper hot sauce. I recommend using Frank's Hot Sauce, as it is mild and easy to find. The mildness allows you to adjust the heat to your own preferences by adding more tabasco or cayenne.

How to Make Homemade Buffalo Sauce Spicier

The key to make the buffalo sauce hot or not is all in the Tabasco for this recipe. Just a few dashes will amp up the heat quite a bit. I typically use about 3 or 4 shakes. Add a few shakes, stir, and then taste to test whether you've reached your desired spiciness.

Ingredients

  • ½ cup unsalted butter
  • 1 cup hot pepper sauce (such as Frank's RedHot®)
  • 1 tablespoon white vinegar
  • ½ teaspoon garlic powder (optional)
  • Tabasco sauce to taste

Instructions

  • To a medium saucepan over medium heat, add butter and allow to melt.
  • When butter is melted, stir in hot sauce, vinegar, and garlic powder.
  • Bring the mixture to a boil and then reduce to a simmer and whisk for 5-7 minutes.
  • Remove from heat, and add Tabasco sauce to adjust spiciness to your liking.
  • Use immediately or store in an airtight container in the refrigerator up to 1 month.
